Marco Rios
The heart and hands of Cafe Rio's kitchen. Marco trained in San Francisco and brings 20 years of culinary expertise to every recipe he creates.
Cafe Rio was founded in 2009 by Marco and Elena Rios, a husband-and-wife duo who believed that the best food is simple food — made with the freshest ingredients, seasoned with care, and shared with community.
What started as a tiny corner cafe on W 2nd S quickly became a beloved local institution. Word spread fast: Cafe Rio wasn't just a place to eat — it was a place to belong. Regulars became friends, and strangers became regulars.
Today, our menu spans handcrafted sandwiches, vibrant bowls, hearty mains, and pastries baked fresh each morning — all rooted in the same commitment to quality that Marco and Elena instilled from day one.
Every dish we serve is guided by three simple commitments that have defined Cafe Rio since the very first day we opened our doors.
We source locally whenever possible, partnering with Idaho farms to bring you produce at peak freshness. No frozen shortcuts, no artificial shortcuts — just honest food.
Every plate that leaves our kitchen has been handled with attention and intention. Our chefs don't just cook — they craft. Each recipe is tested, refined, and served with pride.
Cafe Rio is Rexburg's living room. We exist to bring people together — over food, over conversation, over shared moments that matter. Our community is our greatest ingredient.
We never cut corners on ingredients, preparation or service. Quality is non-negotiable — in the kitchen and at every table.
From compostable packaging to reducing food waste, we take our environmental responsibilities seriously. Good food shouldn't cost the planet.
Our doors are open to everyone. We celebrate diversity in our team and on our menu, crafting dishes that honor many cultures and traditions.
We respect tradition but embrace creativity. Our seasonal specials and rotating menu keep things exciting for regulars and newcomers alike.
From a humble beginning to a beloved community staple — here are the milestones that shaped who we are.
